Budget Friendly Feta Shrimp Pasta

Ingredients:

  • 10 oz dried pasta

  • 1 lb raw shrimp (peeled, deveined, with tail off) or 1 lb sausage

  • 2 zucchini thinly sliced

  • 1/2 jar pasta sauce (14 oz)

  • 11 ounces of crumbled feta

  • 2 tbsp olive oil

  • Spices: salt, pepper, garlic powder and Italian seasoning

  • Fresh basil for garnish (optional)

Directions:

  1. Cook pasta according to package instructions.

  2. While pasta cooks, preheat a skillet and add olive oil, shrimp, and spices. Once fully cooked, drain the shrimp and set aside.

  3. Add the rest of the olive oil (1 tablespoon) into the skillet and add zucchini and more spices to taste. Once the zucchini is cooked, add the shrimp and pasta sauce to the skillet.

  4. Add cooked pasta to vegetable shrimp mixture and stir well.

  5. Add feta cheese and simmer on low for five minutes.

  6. Top with fresh basil (optional).
